My church ladies absolutely demanded I bring this to the spring potluck again. I am still shocked it only takes 3 ingredients.

Blueberry Cobbler

Blueberry cobbler is a classic comfort dessert that perfectly balances sweet, juicy fruit with a golden, buttery topping. Beloved for its simplicity and rustic charm, it's ideal for both beginner bakers and experienced cooks.

Whether you're preparing it for a family gathering, a cozy evening at home, or a special treat, blueberry cobbler never disappoints. The combination of warm blueberries bursting with flavor and a soft, slightly crisp topping creates a dessert that feels both nostalgic and indulgent.

Cobbler is especially popular because it requires minimal preparation and uses basic pantry ingredients. Unlike pies, there's no need to worry about rolling dough or achieving a perfect crust. Instead, everything comes together easily in one baking dish. The result is a dessert that looks beautiful, smells amazing, and tastes even better.

Prep Time: 15 minutes
Cook Time: 40–45 minutes
Total Time: 55–60 minutes
Servings: 6–8

Ingredients

For the Blueberry Filling:

  • 4 cups fresh or frozen blueberries

  • 3/4 cup granulated sugar

  • 1 tablespoon lemon juice

  • 1 teaspoon lemon zest (optional)

  • 2 tablespoons cornstarch

  • 1/4 teaspoon salt

  • 1/2 teaspoon vanilla extract

For the Cobbler Topping:

  • 1 cup all-purpose flour

  • 1/2 cup granulated sugar

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/2 cup milk

  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

Optional Toppings:

  • Powdered sugar, for dusting

  • Vanilla ice cream or whipped cream

    Instructions

    1. Prepare the oven and dish. Preheat your oven to 180°C (350°F). Lightly grease a baking dish (around 8×8 inches or similar size). A glass dish works particularly well, as it allows you to see the bubbling fruit.

    2. Make the blueberry filling. In a large bowl, combine the blueberries, sugar, lemon juice, lemon zest, cornstarch, salt, and vanilla extract. Mix gently until the blueberries are evenly coated. The cornstarch will help thicken the juices as the cobbler bakes. Pour the blueberry mixture into the prepared baking dish, spreading it evenly.

    3. Prepare the topping. In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract. Stir until just combined. The batter should be slightly thick but pourable.

    4. Assemble the cobbler. Spoon the topping over the blueberry mixture. Don't worry about covering it perfectly—the rustic, uneven topping is part of the cobbler's charm. As it bakes, the topping will spread and form a golden crust.

    5. Bake. Place the dish in the preheated oven and bake for 40–45 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.

    6. Cool and serve. Remove the cobbler from the oven and let it cool for about 10–15 minutes. This allows the filling to thicken slightly. Dust with powdered sugar if desired and serve warm.

Tips for the Best Blueberry Cobbler

      • Use fresh or frozen blueberries: Both work well. If using frozen, do not thaw them before baking to avoid excess liquid.

      • Adjust sweetness: Depending on how sweet your blueberries are, you can reduce or increase the sugar slightly.

      • Add spices: A pinch of cinnamon or nutmeg can add warmth and depth to the flavor.

      • Don't overmix the batter: Stir just until combined to keep the topping light and tender.

      • Check doneness: The top should be golden and slightly crisp, while the filling should be bubbling.
