Creamy Avocado Egg Corn Salad with Red Onion & Fresh Herbs

A fresh, creamy, and satisfying salad that comes together in minutes. Perfect for light lunches, picnics, potlucks, or as a colorful side dish.

Prep Time: 15 minutes
Cook Time: 10 minutes (for hard-boiled eggs)
Total Time: 25 minutes
Servings: 4

Ingredients

  • 2 ripe avocados, diced

  • 4 hard-boiled eggs, chopped

  • 1 cup sweet corn (fresh, canned, or frozen and thawed)

  • ½ cup red onion, finely diced

  • ¼ cup fresh parsley, chopped

  • 2 tbsp fresh cilantro or dill, chopped (optional)

  • 2 tbsp mayonnaise or Greek yogurt

  • 1 tbsp olive oil

  • 1 tbsp fresh lemon or lime juice

  • ½ tsp salt, or to taste

  • ¼ tsp black pepper, or to taste

  • Pinch of red pepper flakes (optional)

    Instructions

    1. Prepare the eggs: If not already done, hard-boil the eggs, cool them in ice water, peel, and chop into bite-sized pieces.

    2. Prep the vegetables: Dice the avocados, finely chop the red onion, and chop the fresh parsley (and any optional herbs).

    3. Combine the base: In a large bowl, gently combine the avocado, hard-boiled eggs, sweet corn, and red onion.

    4. Make the dressing: In a small bowl, whisk together the mayonnaise (or Greek yogurt), olive oil, lemon or lime juice, salt, and black pepper.

    5. Toss together: Pour the dressing over the salad and gently fold everything together until evenly coated. Be careful not to mash the avocado.

    6. Add herbs and finish: Stir in the fresh parsley and optional herbs. Sprinkle with red pepper flakes if desired.

    7. Chill and serve: Refrigerate for 10–15 minutes to let the flavors meld, then serve cold. Garnish with extra herbs before serving.

      Tips

      • Use firm-ripe avocados so they hold their shape when tossed.

      • Add the avocado last and fold gently to avoid a mushy texture.

      • For extra crunch, add chopped celery or cooked bacon bits.

      • Squeeze lemon or lime juice over the avocado early to prevent browning.

      • Best enjoyed the same day for peak freshness.

      Optional Additions

      • Cherry tomatoes, halved

      • Crumbled feta or cotija cheese

      • Chopped green onions

      • Diced bell pepper

      • A spoonful of sour cream for extra creaminess

      • Cooked chicken or shrimp to make it a full meal
