Patty Melt with Secret Sauce

Classic Patty Melt with Homemade Secret Sauce

This diner staple features a juicy, seasoned beef patty layered with melted cheese and sweet caramelized onions, all tucked between slices of buttery, crispy grilled bread. The crowning glory? A tangy, creamy homemade secret sauce that brings every bite together in perfect harmony.

Yield: 4 sandwiches
Prep Time: 15 minutes
Cook Time: 20 minutes

Ingredients

For the Secret Sauce:

  • ½ cup mayonnaise

  • 2 tablespoons ketchup

  • 1 tablespoon yellow mustard

  • 1 teaspoon Worcestershire sauce

  • 1 tablespoon finely chopped pickles (or relish)

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika (optional)

For the Patty Melts:

  • 1 lb (450 g) ground beef (80/20 blend)

  • 1 medium onion, thinly sliced

  • 8 slices rye bread (or sourdough)

  • 8 slices Swiss or American cheese

  • 2 tablespoons butter, softened

  • Salt and pepper, to taste

Instructions

  1. Make the Secret Sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, Worcestershire sauce, pickles, garlic powder, and paprika until smooth. Season to taste, then refrigerate while you prepare the rest.

  2. Caramelize the Onions: Heat a skillet over medium heat with a drizzle of oil or a small pat of butter. Add the sliced onions and cook slowly for 10–12 minutes, stirring frequently, until soft and golden brown. Remove and set aside.

  3. Form and Cook the Patties: Divide the ground beef into 4 equal portions and shape into thin patties, roughly the same size as your bread slices. Season both sides generously with salt and pepper. Cook in a skillet over medium-high heat for 3–4 minutes per side, until browned and cooked through. Top each patty with a slice of cheese and let it melt slightly.

  4. Assemble the Sandwiches: Spread the secret sauce on one side of each bread slice. On four slices, layer a cheesy patty, a portion of caramelized onions, and another slice of cheese. Top with the remaining bread slices, sauce side down.

  5. Grill to Perfection: Butter the outsides of each sandwich. Heat a large skillet or griddle over medium heat and grill each sandwich for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crispy. Slice in half and serve immediately.

Tips & Variations

  • Cheese swap: Try Gruyère or sharp cheddar for a different flavor profile.

  • Bread options: Substitute rye with Texas toast or sourdough for extra crunch.

  • Bold upgrades: Add pickled jalapeños or crispy bacon for a spicy or smoky kick.

  • Serve with: Fries, coleslaw, or sweet potato chips for a complete diner-style meal.
