Low-Carb Chinese Cabbage & Ground Beef Stir Fry
This isn't your average weeknight scramble. By browning the ground beef until it's deeply caramelized, we build a rich, savory foundation that transforms simple Napa cabbage into something utterly craveable. Fresh ginger, garlic, and a finishing kiss of sesame oil deliver layers of aromatic complexity—all without a drop of sugar or heavy sauce. It's fast, it's low-carb, and it's downright delicious.
Ingredients:
1 lb ground beef
1 medium head Napa (Chinese) cabbage, sliced
1 medium onion, chopped
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp olive oil
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 green onions, sliced (for garnish)
1 tsp red pepper flakes (optional)
Salt and pepper, to taste
The Method:
Build the Base: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until well-browned, breaking it into small crumbles as it goes. Pro tip: let it sit undisturbed for a minute or two between stirs—that patience rewards you with delicious crispy, caramelized edges.
Bloom the Aromatics: Stir in the chopped onion, garlic, and ginger. Cook for 3–4 minutes until the onion turns translucent and the kitchen fills with that irresistible fragrant punch.
Add the Cabbage: Pile in the sliced Napa cabbage. Don't worry if it looks like a mountain—it will wilt down dramatically. Cook for about 5 minutes, stirring occasionally, just until it softens but still retains a pleasant, snappy crunch. (Remember: cabbage releases water as it cooks, so we want it tender-crisp, not soggy.)
Season & Toss: Pour in the soy sauce, sesame oil, and red pepper flakes (if using). Toss everything vigorously to coat every bit of beef and cabbage in that glossy, savory glaze. Taste and adjust with salt and pepper as needed.
Finish Fresh: Cook for another 3–4 minutes until the cabbage is vibrant and tender. Remove from the heat, shower with sliced green onions, and serve hot—straight from the pan.
