Creamy Lemon Pasta Shells
Yield: 4 servings
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients
For the Pasta:
12 oz (340 g) large pasta shells (or medium shells)
2 tbsp kosher salt (for the pasta water)
For the Creamy Lemon Sauce:
3 tbsp unsalted butter
3 cloves garlic, minced (or finely grated)
1 cup heavy cream (or half-and-half for a lighter version)
½ cup freshly grated Parmesan cheese (plus more for serving)
Zest of 1 large lemon (about 1 tbsp)
¼ cup fresh lemon juice (about 1½ lemons)
½ tsp salt (adjust to taste)
¼ tsp black pepper
Pinch of red pepper flakes (optional, for subtle heat)
For the Garnish & Toppings:
Fresh parsley, chopped (for color and freshness)
Extra lemon zest
Grilled chicken, shrimp, or scallops (optional, for protein)
Instructions
1. Cook the pasta:
Bring a large pot of heavily salted water to a rolling boil. Add the pasta shells and cook according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining. Drain the shells and set them aside.
2. Start the sauce:
While the pasta cooks, melt the butter in a large skillet or sauté pan over medium heat. Add the minced garlic and cook for 1–2 minutes until fragrant, stirring frequently (do not let it burn).
3. Build the creaminess:
Pour in the heavy cream and bring it to a gentle simmer. Let it bubble softly for 2–3 minutes, stirring occasionally, until it thickens slightly.
4. Add the lemon and cheese:
Turn the heat to low. Stir in the Parmesan cheese, lemon zest, and lemon juice. Whisk continuously until the cheese is fully melted and the sauce is smooth. Season with salt, pepper, and red pepper flakes (if using).
5. Combine the pasta:
Add the drained pasta shells to the skillet. Toss gently to coat every shell in the sauce. If the sauce seems too thick, add the reserved pasta water a few tablespoons at a time until it reaches a silky, pourable consistency that clings to the shells.
6. Serve immediately:
Plate the pasta while it’s hot. Garnish with fresh parsley, an extra sprinkle of Parmesan, and a pinch of fresh lemon zest to brighten it up.
Pro Tips for Success
Don't skip the pasta water! The starchy water is liquid gold—it helps the cream sauce emulsify and stick to the shells rather than turning greasy or separating.
Zest before you juice. It's much easier to zest a whole lemon before cutting it in half. Use a microplane for the finest, most aromatic zest.
Taste as you go. Lemons vary in tartness. Start with the suggested amount of juice and add more if you want a punchier, brighter flavor.
The shell shape matters. The little "cups" of the shells are perfect for trapping the creamy sauce, so every bite is bursting with flavor.
Easy Variations
Add Protein: Toss in grilled chicken strips, sautéed shrimp, or even crispy pancetta for a heartier meal.
Make it Vegetarian: Add a handful of fresh spinach or roasted asparagus at the end for extra greens.
Vegan Version: Use vegan butter, full-fat coconut cream (instead of heavy cream), and a good-quality vegan Parmesan.
Extra Herby: Stir in fresh basil or dill along with the parsley for a lovely herbal twist.
Enjoy your creamy, dreamy bowl of lemony goodness! Let me know if you need a side salad or wine pairing suggestion to go with it. 😊🍋
