Ingredients
3 pounds Superior potatoes, sliced (try to keep slices fairly even in thickness)
2 cans (10.5 ounces each) condensed cream of chicken soup
2 cups shredded sharp cheddar cheese, divided
(Use 1½ cups for the potato mixture and ½ cup for the topping)1 cup sour cream (full-fat recommended for best flavor and texture)
Instructions
1. Prep the Slow Cooker
Lightly grease the inside of your slow cooker with cooking spray or butter to prevent sticking.
2. Make the Creamy Mixture
In a large mixing bowl, combine:
Both cans of condensed cream of chicken soup
1 cup sour cream
1½ cups of the shredded sharp cheddar cheese
Stir until smooth and well blended.
3. Add the Potatoes
Add the sliced potatoes to the bowl.
Gently fold and stir until every potato slice is evenly coated with the creamy mixture.
4. Transfer to Slow Cooker
Pour the coated potatoes and all the creamy mixture into the greased slow cooker.
Spread everything into an even, compact layer.
5. Cook Low and Slow
Cover with the lid.
Cook on low for 5 to 6 hours, until the potatoes are tender when pierced with a knife and the edges are hot and bubbly.
6. Add the Cheese Topping
Sprinkle the remaining ½ cup of cheddar cheese evenly over the top.
Cover again and cook for 10 to 15 minutes more, just until the cheese melts into a golden, gooey layer.
7. Serve
Serve hot and creamy straight from the slow cooker.
Storage & Reheating Notes
Store leftovers in a covered container in the refrigerator for 3 to 4 days.
Reheat individual portions in a microwave-safe bowl in short bursts, stirring in between. Add a small spoonful of sour cream if you want to refresh the creaminess.
Reheat larger amounts in a covered baking dish in a low oven until warmed through.
Holding warm: You can keep the casserole on the slow cooker's "warm" setting for a short time. Before serving, gently stir around the edges – but be careful not to mash the potatoes.
Pro Tips for Best Results
Tip Why It Helps Slice potatoes evenly Uniform slices ensure all pieces cook at the same rate – no hard or mushy spots. Don't skip greasing the pot This casserole is rich and tends to stick to the sides as it cooks. Use full-fat sour cream Low-fat versions can separate or become watery during long cooking. Resist lifting the lid Each time you open the slow cooker, heat escapes and adds 15–20 minutes of extra cook time.
