Yield: 4 sandwiches
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients
For the Secret Sauce:
½ cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
1 tablespoon finely chopped pickles (or relish)
½ teaspoon garlic powder
½ teaspoon smoked paprika (optional)
For the Patty Melts:
1 lb (450 g) ground beef (80/20 blend)
1 medium onion, thinly sliced
8 slices rye bread (or sourdough)
8 slices Swiss or American cheese
2 tablespoons butter, softened
Salt and pepper, to taste
Instructions
Make the Secret Sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, Worcestershire sauce, pickles, garlic powder, and paprika until smooth. Season to taste, then refrigerate while you prepare the rest.
Caramelize the Onions: Heat a skillet over medium heat with a drizzle of oil or a small pat of butter. Add the sliced onions and cook slowly for 10–12 minutes, stirring frequently, until soft and golden brown. Remove and set aside.
Form and Cook the Patties: Divide the ground beef into 4 equal portions and shape into thin patties, roughly the same size as your bread slices. Season both sides generously with salt and pepper. Cook in a skillet over medium-high heat for 3–4 minutes per side, until browned and cooked through. Top each patty with a slice of cheese and let it melt slightly.
Assemble the Sandwiches: Spread the secret sauce on one side of each bread slice. On four slices, layer a cheesy patty, a portion of caramelized onions, and another slice of cheese. Top with the remaining bread slices, sauce side down.
Grill to Perfection: Butter the outsides of each sandwich. Heat a large skillet or griddle over medium heat and grill each sandwich for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crispy. Slice in half and serve immediately.

Cheese swap: Try Gruyère or sharp cheddar for a different flavor profile.
Bread options: Substitute rye with Texas toast or sourdough for extra crunch.
Bold upgrades: Add pickled jalapeños or crispy bacon for a spicy or smoky kick.
