This recipe leverages the emulsifying properties of cream cheese to create a dense, creamy base without the need for gelatin or baking. The pre-prepared cheesecake filling acts as a stabilizer, contributing additional thickeners and sweeteners that ensure a clean, sliceable texture upon chilling. The cherry pie filling provides both visual contrast and a tart-sweet counterpoint to the rich dairy layer.
Mise en Place:
680g full-fat cream cheese (3 standard 8 oz blocks), tempered to room temperature
1.8L prepared cheesecake filling (3 × 21 oz cans)
1.2L cherry pie filling (2 × 21 oz cans)
Neutral oil or cooking spray, for greasing
Procedure:
Initial Emulsification: In the bowl of a stand mixer fitted with a paddle attachment (or using a hand mixer), beat the softened cream cheese on medium speed until aerated, completely smooth, and free of any lumps—approximately 2–3 minutes. Scrape down the bowl as needed.
Incorporation: Add the prepared cheesecake filling and mix on low speed, gradually increasing to medium, until the mixture achieves a homogenous, glossy, custard-like consistency. Avoid over-mixing, which can incorporate excess air and lead to an undesirable whipped texture.
Molding & Chilling: Divide the mixture evenly between two lightly greased 9×13-inch (or similar) baking dishes, spreading level with an offset spatula. For cleaner slicing and easier topping application, chill the uncovered dishes for 20–30 minutes to set the cream layer slightly before adding the fruit.
Topping Application: Gently spoon the cherry pie filling over the cream cheese layer in an even, decorative layer, taking care not to disturb the surface beneath.
Final Setting: Cover with plastic wrap or lids and refrigerate for a minimum of 4 hours—ideally overnight—to allow the starches and stabilizers to fully hydrate and set. The bars should be firm enough to cut cleanly with a warm knife. Serve well-chilled for optimal texture and flavor integration.
