My southern grandmother fed the whole neighborhood with this cheap trick. Just 4 ingredients for the thickest most comforting dinner you will ever make this spring.

Slow Cooker 4-Ingredient Ham Hocks and Pinto Beans
This is the kind of meal that feels like a warm hug in a bowl—classic, no-fuss comfort food that asks almost nothing of you but time. As dried pinto beans simmer low and slow with smoky ham hocks, the meat's fat and collagen melt into the cooking liquid, creating a rich, savory "pot liquor" that infuses every single bean with deep, cured, porky flavor. The best part? No pre-soaking required. The slow cooker handles the hydration gradually, so the beans turn out creamy and intact while soaking up all that smoky goodness.

Ingredients:

  • 2 lbs smoked ham hocks

  • 2 cups dried pinto beans

  • 8 cups water

  • 1½ tsp kosher salt

The Method:

  1. Rinse and Sort: Give the dried pinto beans a good rinse under cold water, and pick through them to remove any stray debris or tiny stones. (Skip the soak—trust the slow cooker to do the work while you go about your day.)

  2. Layer the Base: Place the ham hocks in the bottom of a 5–7 quart slow cooker. Pile the beans on top, then pour in the water and sprinkle with the salt. Make sure the liquid covers the beans by at least ½ inch—this ensures even cooking from start to finish.

  3. Let Time Do the Magic: Cover and cook on LOW for 8–10 hours, or on HIGH for 5–6 hours. You'll know it's ready when the beans are tender enough to mash with a spoon and the meat falls off the bone at the mere suggestion of a fork.

  4. Shred the Meat: Carefully remove the ham hocks from the pot. Discard the bones, skin, and any chewy bits, then chop or shred the tender meat into bite-sized pieces.

  5. Stir and Thicken (Optional): Return the shredded meat to the beans and give everything a good stir. For an even thicker, gravy-like consistency, mash a small portion of the beans against the side of the pot before stirring—the released starch will naturally tighten the broth into a silky, hearty sauce. Serve hot and savor the smoky, soulful goodness.
