Step-by-Step Instructions
1. Prep the slow cooker
Lightly grease a 4–6 quart slow cooker with butter or nonstick spray. For easy cleanup, use a slow cooker liner.
2. Layer beef & soup
Place the beef (or pre-browned ground beef) in the bottom of the crock. Pour the undiluted condensed soup evenly over the top. If using onion, garlic, or dried herbs, stir them in now. Do not add extra liquid – the beef will release natural juices as it cooks.
3. Slow cook the base
Cover and cook on LOW for 6–7 hours (fall-apart tender) or HIGH for 3–4 hours (quicker). The beef is ready when it shreds easily with a fork.
4. Add the noodles
About 45–60 minutes before serving, stir in the dry egg noodles, pressing them to submerge. If the mixture looks too thick, add a splash of water or broth. Cover and cook on HIGH for about 45 minutes, until noodles are tender.
5. Finish & serve
Turn off the slow cooker. If using frozen peas and carrots, stir them in during the final 15 minutes. Let the stew rest, uncovered, for 5–10 minutes – this thickens the sauce and melds the flavors. Garnish with fresh parsley. Serve warm with crusty bread or your favorite side.
