This Crockpot meal is a family favorite—easy, flavorful, and always a hit. Tender pork chops and hearty red potatoes are coated in a tangy ranch mixture and slow-cooked to perfection.
Ingredients
3 lbs red potatoes, quartered
6 boneless pork chops (¾-inch thick; bone-in also works)
½ cup olive oil
2 teaspoons dry ranch seasoning
2 teaspoons apple cider vinegar
Salt, to taste
2 tablespoons butter, cubed
Instructions
Optional sear: For extra flavor, sear the pork chops in an oiled skillet over medium-high heat until lightly browned on both sides.
Make the ranch mixture: In a small bowl, whisk together the olive oil, dry ranch seasoning, and apple cider vinegar.
Assemble in slow cooker: Place the quartered red potatoes and pork chops into the slow cooker. Pour the ranch mixture over everything and toss to coat the potatoes evenly.
Add butter: Scatter the cubed butter on top.
Cook: Cover and cook on high for 3 hours or low for 5–6 hours, until the pork is tender and the potatoes are fork-soft.
